VEGAN ANZAC WOMBATS

INGREDIENTS

100g porridge oats
100g desiccated coconut
100g plain flour
100g golden caster sugar
100g dairy free butter
1 tbsp golden syrup
1 tbsp water (or coffee)
1 tsp bicarbonate of soda

To decorate

100g dark chocolate

1 weetabix
5 bourbon biscuits
Dark chocolate covered almonds
Dark chocolate peals or chocolate chips

METHOD

Pre-heat the oven to 180C/fan160C/Gas 4. Measure the oats, desiccated coconut, flour and sugar into a bowl. Melt the butter and golden syrup in a saucepan and once melted remove from the heat. Add in the water or coffee and bicarbonate of soda together and stir into the mixture in the pan. Pour the bowl of dry ingredients into the mixture in the pan and stir to combine, before transferring back into the bowl. Allow the mixture to cool before shaping into balls, approx 50g each.

Place on a large non stick parchment lined trays and gently flatten down, leaving several cm between each one, to allow for spreading. Bake in for approx 10 minutes until golden. Transfer to a wire rack to cool.

To decorate and turn into wombats, break up and smash the weetabix and bourbon biscuits together to create your wombat fur. Place in a bowl before melting the dark chocolate in another to use as both edible glue and paint. Take one of your Anzac biscuits and place on a sheet of parchment. Break off two similar wombat shaped and sized ears from another biscuit and with a paintbrush apply your melted chocolate, before sticking on to the sides of your anzac wombats face. Allow the chocolate to set before painting the entire front of the face and ears in a coating of chocolate. Before the chocolate has time to set, scatter over your ground up ‘wombat fur’.

To create your wombats noses paint some chocolate on to one of your chocolate covered almonds and stick on to your wombats face. For the eyes, take a cocktail stick or the end of a fine paintbrush and insert it into the ‘fur’ before carefully placing a chocolate covered pearl in place. Dab some chocolate inside of the wombats ears to create an inner ear impression. Repeat the process to create lots more wombats!
